Prosecco. An elixir with the magical ability to transport you back in time to the 1960s. When you hold a glass in your hand and watch the CO2 particles hypnotically fly upwards at the speed of light in the golden drink, it is difficult not to be drawn into a scene as if torn from a Fellini film. Despite many common features with champagne, it is quite different. It is the essence of Italy. Nonchalant, enjoying life, it carries the typical “La Dolce Vita”.

And what prosecco can be better than the first, the oldest? Wine expert, Mr. Vladimír Syč Milý, told us the story of Carpenè Malvolti, the history that gave prosecco its name: " Although it might seem that the combination of a perfectly tailored suit and a quality, perfectly chilled Prosecco should not be a problem, as always, appearances are deceiving... We associate a suit in any form with the maximum dose of seriousness and perfection, while the idea of ​​Prosecco is about its playfulness and simplicity. Just as protocol prescribes a dress code for a given occasion, so protocol permits the drinking of drinks. And sparkling wines are the only ones that are allowed to be drunk anywhere, whether you are at a wedding, a reception at the embassy or a dinner at a hotel, and at any time, whether in the morning, for lunch or in the evening. " Mr. Syč Milý begins his story.
" The Prosecco area is located in northeastern Italy, just fifty kilometers from Venice in the province of Treviso. It is as far from the Dolomites as it is from the Adriatic Sea. It consists of about 20,000 hectares of vineyards with an altitude of up to 500 meters. Unlike in the past, when prosecco was a sweet, albeit sparkling, but relatively undrinkable wine, today it has become a modern sparkling wine with all the attributes. Fine and persistent effervescence, complexity of aromas and flavors have become a given. According to the law, only sparkling wine that is produced according to all the rules and laws of the Prosecco area, and in particular contains at least 85% of the Glera variety, can bear the Prosecco label. "
" Prosecco, like champagne, is drunk well chilled. The right temperature is very important, ideally 6-8 degrees Celsius, so that prosecco can convey all its information, especially the fruitiness and the way in which sugar and acidity are balanced. Because of the fruitiness, a special glass for prosecco has also been developed, which is more like a white wine glass. "
The existence, meaning, and modern concept of prosecco are most closely associated with the name of Prof. Antonio Carpenè, who founded the Carpenè Malvolti company in 1868 with his friend Angelo Malvolti.

" During his life, Mr. Carpenè published a number of publications on wine that were unsurpassed for their time, and his son Antonio Carpenè Jr. is still considered the ambassador of the Prosseco region. He loved his country and his people. He was an incredible patriot who supported the unification of Italy in 1866, together with Giuseppe Garibaldi. However, he also considered the development of winemaking to be his mission, and therefore a year later he founded the first oenological institute in Italy, the Scuola Enologica in Conegliano, whose mission is to increase the level of grape production and improve wine production to this day. It is thanks to him that this school belongs to one of the most prestigious educational oenological institutes in the world. "
" For five generations, Carpenè Malvolti, founded by this scientifically-minded patriot, has been considered synonymous with the highest quality of Italian sparkling wines. They were the first to use modern technological processes to produce sparkling wine instead of rustic and simple methods. Time has shown that these processes are ideal for the varieties from the Prosecco area, as they are able to preserve their fresh, fruity character. Moreover, they were the very first company in history to use the name Prosecco on its label in 1924, " concludes Mr. Syč Milý.
