“You can get a whole city under your skin from its flavors,” a wise but unknown man once said. Reflecting on this, we recently came to the conclusion that, although it may not seem like it at first glance, Bratislava is undergoing changes like never before. The post-communist city, which many locals curse, is changing at the speed of light into a modern metropolis, often unnoticed. Just look at the possibilities of gastronomy, coffee, culture…
However, in the mix of cuisines, sometimes something extraordinary appears, something that defies even this new standard. And we came across just such a restaurant a few months ago on the corner of the aforementioned Fresh market.
Every day you can find fantastic things on the menu from the world's imagination. And just when you think nothing can surprise you anymore at The Cut, the gentlemen and ladies in the kitchen outdo themselves again. It's no coincidence that it immediately became one of our favorite destinations for a weekday lunch.
Stop by and try it. You won't regret it!

The ever-growing number of restaurants gives us the choice to spend our lunch half hour every day enjoying small gourmet feasts.
A few years ago, busy crowds of residents were forced to settle for lunch in the form of chicken breast of dubious origin, sandwiched between a slice of cheese and a peach. And today? The ever-growing number of restaurants gives us the choice of spending our lunch half hour every day at small gourmet feasts. Head to the bistros in the city center, the cafes on the streets of Ružinova, or the small restaurants in the now famous Fresh Market and indulge in burgers, street food, paella, hummus… Whatever your heart desires is here.
The Cut is a true treasure trove for meat lovers. The minimalist interior immediately transports you to the bowels of a New York Deli upon entering, where an attack on all your senses begins. A huge piece of porchetta and pastrami lying temptingly in the display case test your self-preservation instinct, which only with difficulty prevents you from jumping over the counter and pouncing on these incredible pieces of meat. They could perhaps even exhibit them in a gallery… The Cut breaks down the common dining conventions that are deeply rooted among people and brings world metropolises to us, to the everyday life of Bratislava. Thanks to this unique restaurant, we suddenly have the opportunity to go for lunch and have a meal that we would never really prepare at home.
After biting into the chicken tikka, you find yourself in India in a split second, while the next day at lunch you are briefly transported to Texas with the help of pork ribs.
Pastries prepared for several days, or falling apart pulled pork, which is the result of the chef's hard work, are just the tip of the iceberg. Unique equipment in the kitchen, designed for perfect preparation of meat, combined with constantly improved recipes, are the key to a great lunch. The owners at The Cut have combined their passion for exotic travel and gastronomy, and thanks to their many years of experience, they are able to prepare dishes that serve as a teleport. After biting into chicken tikka, you will find yourself in India in a split second, while the next day, at lunch, you will be transported to Texas for a moment with the help of pork ribs. And this is what makes The Cut exceptional. World dishes that taste exactly as they should. Imagine eating grandma's bryndza dumplings in Sydney, it's about the same.

These are the ingredients that perfectly enhance your entire experience. Even though that experience is only as long as your lunch break. However, to get The Cut under your skin, you need more than one visit. You really can't taste everything at once.
